Colour: Warm honey. Body: Full bodied and robust. Nose: Lingering wood cinders of tar and smoke, with just a trace of vanilla and a subtle citrus note. Palate: A strong Islay character with traces of sea salt and burnt oak chips. The smokey nature is apparent throughout; a malty vanilla flavour bringing balance to the overall taste. Finish: A powerful Islay aftertaste of sweet smoke with a hint of iodine.

Islay is the greatest of the whisky islands. Harboured off the West Coast of Scotland, this small island is battered by salt winds, rain and the cold Scottish waters of the Inner Hebrides. This small Scottish island is host to eight whisky distilleries, all producing the most powerful of whisky flavours. Much of the Islay is deep with peat - making the waters flow dark and brown; not only flavouring the whisky but providing a valuable heat source which is still used by the islanders today. It is said that a dram of Islay whisky gives the unmistakable taste of Scotland. The eight distilleries on the island are famous throughout the world for their peaty characteristics and dry finish; behind the smoke however, are gentle mossy scents, traces of seaweed and just a hint of spice.

ISLAY Smokestack 37.5ml Islay Whisky 12.5ml Gordons gin Br Sp of Honey 25ml of Fresh pressed Apple Juice 2 Cardomon pods Glug of egg white Glass: Rocks Garnish: 2 Dots of Angustora Bitters Method: Muddle down Cardamon seeds(empty out of the skin and discard) add liquids , stir in honey till it dissolves shake and triple strain over cubed ice
